Easy Red Lentil Dal

Ingredients
  

Main Ingredients
  • 1 cup red lentils, rinsed Rinse before cooking.
  • 1 medium onion, chopped Or substitute with shallot.
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 can diced tomatoes Fresh can be used if preferred.
  • 4 cups vegetable broth or water
  • 1 tablespoon oil For cooking.
  • 1 teaspoon salt To taste.
  • 1 squeeze lemon or lime To brighten the flavor.
Spices
  • 1 teaspoon cumin
  • 1/2 teaspoon turmeric
  • 1 teaspoon coriander
  • optional chili Add if you want heat.
Optional Ingredients
  • 1/2 cup coconut milk For extra creaminess.

Method
 

Preparation
  1. Start with a medium pot and a splash of oil. Add chopped onion with a pinch of salt and cook until it starts to soften.
  2. Stir in garlic and ginger. Let it cook for about 30 seconds until fragrant, but do not let it burn.
  3. Add your spices and stir for another 20 to 30 seconds until they become aromatic.
  4. Add diced tomatoes, rinsed red lentils, and broth or water. Bring to a gentle boil, then reduce to a simmer.
  5. Simmer for about 12 to 18 minutes, stirring occasionally. Adjust the texture with more water if necessary.
  6. Finish with salt to taste and a squeeze of lemon or lime to brighten the flavor.

Notes

Dal may taste even better the next day as spices settle in. Store in an airtight container in the fridge for up to 4 days, or freeze for 2 to 3 months. Reheat with a splash of water or broth.
