Preparation
- Pour your Chex cereal into a large mixing bowl. Set it aside so it is ready.
- In a microwave-safe bowl, add chocolate chips, peanut butter, and butter.
- Microwave in 20 to 30 second bursts, stirring each time, until it is smooth. Do not rush this part or the chocolate can seize up.
- Stir in vanilla (and that pinch of salt if you are using it).
Coating
- Pour the warm chocolate peanut butter mixture over the cereal. Use a spatula and gently fold until most pieces are coated. Go slow so you do not crush the cereal.
- Spoon the coated cereal into a large zip top bag. Add 1 1/2 cups powdered sugar to start.
- Seal the bag and shake, shake, shake until everything looks evenly white and coated. Add a bit more powdered sugar if it still looks glossy.
Cooling
- Spread it out on a baking sheet or parchment to cool for 10 to 15 minutes, then snack.
Notes
Store in an airtight container for about 4 to 5 days. For longer storage, refrigerate for up to a week or freeze for up to 2 months.
