Ingredients
  

Main Ingredients
  • 9 cups Rice Chex cereal Corn Chex works too, but Rice Chex stays extra crisp.
  • 1 cup Chocolate chips Semi-sweet is classic.
  • 1/2 cup Peanut butter Creamy is easiest for smooth coating.
  • 1/4 cup Butter Helps everything melt silky.
  • 1 teaspoon Vanilla extract Tiny touch, big difference.
  • 1.5 to 2 cups Powdered sugar Add as needed for full coverage.
  • 1 pinch Salt Optional, especially good if your peanut butter is unsalted.

Method
 

Preparation
  1. Pour your Chex cereal into a large mixing bowl. Set it aside so it is ready.
  2. In a microwave-safe bowl, add chocolate chips, peanut butter, and butter.
  3. Microwave in 20 to 30 second bursts, stirring each time, until it is smooth. Do not rush this part or the chocolate can seize up.
  4. Stir in vanilla (and that pinch of salt if you are using it).
Coating
  1. Pour the warm chocolate peanut butter mixture over the cereal. Use a spatula and gently fold until most pieces are coated. Go slow so you do not crush the cereal.
  2. Spoon the coated cereal into a large zip top bag. Add 1 1/2 cups powdered sugar to start.
  3. Seal the bag and shake, shake, shake until everything looks evenly white and coated. Add a bit more powdered sugar if it still looks glossy.
Cooling
  1. Spread it out on a baking sheet or parchment to cool for 10 to 15 minutes, then snack.

Notes

Store in an airtight container for about 4 to 5 days. For longer storage, refrigerate for up to a week or freeze for up to 2 months.
