Preparation
- Heat your oven to 325°F (163°C).
- Line a large baking sheet with parchment paper.
- In a big bowl, stir together pumpkin puree, maple syrup or honey, oil, vanilla, pumpkin pie spice, and salt.
- Add oats, nuts, and seeds. Mix until all the dry bits look coated.
- Pour the mixture onto the pan and spread it out evenly.
- Press the mixture down firmly with the back of a spoon to help those clusters form.
Baking
- Bake for about 35 to 45 minutes, gently rotating the pan once.
- Turn off the oven and let it sit inside for 10 minutes for extra crunch.
- Cool completely before breaking into clusters.
Notes
Granola stays crunchy for 1 to 2 weeks at room temperature. Store in an airtight container once completely cool. For best clusters, do not stir while baking and let it cool fully.
