  • 3 cups Old fashioned oats The base that crisps beautifully.
  • 1 cup Chopped nuts (optional) Pecans or walnuts for added crunch.
  • 1/2 cup Pumpkin seeds or sunflower seeds For extra texture.
  • 1 cup Pumpkin puree Use pure pumpkin puree, not pie filling.
  • 1/2 cup Maple syrup or honey Choose your favorite sweetener.
  • 1/4 cup Neutral oil Melted coconut oil or avocado oil works well.
  • 2 teaspoons Pumpkin pie spice Plus a pinch of salt.
  • 1 teaspoon Vanilla extract Enhances the flavor.
Optional Add-Ins
  • 1 cup Dried cranberries, chocolate chips, or coconut flakes Add after baking for extra flavor.

Method
 

Preparation
  1. Heat your oven to 325°F (163°C).
  2. Line a large baking sheet with parchment paper.
  3. In a big bowl, stir together pumpkin puree, maple syrup or honey, oil, vanilla, pumpkin pie spice, and salt.
  4. Add oats, nuts, and seeds. Mix until all the dry bits look coated.
  5. Pour the mixture onto the pan and spread it out evenly.
  6. Press the mixture down firmly with the back of a spoon to help those clusters form.
Baking
  1. Bake for about 35 to 45 minutes, gently rotating the pan once.
  2. Turn off the oven and let it sit inside for 10 minutes for extra crunch.
  3. Cool completely before breaking into clusters.

Notes

Granola stays crunchy for 1 to 2 weeks at room temperature. Store in an airtight container once completely cool. For best clusters, do not stir while baking and let it cool fully.
