Preparation
- In a big bowl, stir the warm milk with the yeast and a spoon of sugar. Let it sit for about 5 to 10 minutes until it looks foamy.
- Add pumpkin puree, egg, melted butter, salt, and the rest of the sugar. Stir until smooth.
- Gradually add flour, stirring until a soft dough forms that pulls away from the bowl.
- Knead the dough until it feels stretchy and smooth, which can take about 5 to 6 minutes in a stand mixer or 8 minutes by hand.
Rising
- Put the dough in a greased bowl, cover it, and let it rise until doubled, about 45 to 90 minutes.
Baking
- Shape the dough into 12 to 15 rolls and place in a greased baking dish.
- Let them rise again until puffy.
- Bake at 350°F until golden, usually around 18 to 25 minutes.
- Brush with melted butter immediately upon removing from the oven.
Notes
For a moist dough, avoid over-flouring. Optional tips include refrigerating shaped rolls overnight for a make-ahead option and freezing baked rolls for later use.
