  • 2 teaspoons Active dry yeast or instant yeast Both work
  • 1 cup Pumpkin puree Use plain canned pumpkin, not pie filling
  • 1/4 cup Sugar or honey Sweetener for the dough
  • 1 large Egg For richness
  • 1/4 cup Melted butter Plus a little extra for brushing
  • 1 teaspoon Salt To enhance flavor
  • 3 cups All-purpose flour Add gradually until dough pulls away from bowl
  • 1 pinch Pumpkin spice or cinnamon Optional for extra fall vibes

Method
 

Preparation
  1. In a big bowl, stir the warm milk with the yeast and a spoon of sugar. Let it sit for about 5 to 10 minutes until it looks foamy.
  2. Add pumpkin puree, egg, melted butter, salt, and the rest of the sugar. Stir until smooth.
  3. Gradually add flour, stirring until a soft dough forms that pulls away from the bowl.
  4. Knead the dough until it feels stretchy and smooth, which can take about 5 to 6 minutes in a stand mixer or 8 minutes by hand.
Rising
  1. Put the dough in a greased bowl, cover it, and let it rise until doubled, about 45 to 90 minutes.
Baking
  1. Shape the dough into 12 to 15 rolls and place in a greased baking dish.
  2. Let them rise again until puffy.
  3. Bake at 350°F until golden, usually around 18 to 25 minutes.
  4. Brush with melted butter immediately upon removing from the oven.

Notes

For a moist dough, avoid over-flouring. Optional tips include refrigerating shaped rolls overnight for a make-ahead option and freezing baked rolls for later use.
