Preparation
- Preheat your oven to 350°F. Grease your loaf pan and line it with parchment paper to prevent sticking.
- In a large bowl, whisk together the pumpkin puree, eggs, oil, sugar, and vanilla until smooth.
- In another bowl, stir together the flour, baking soda, baking powder, salt, and cinnamon.
- Add the dry ingredients to the wet mixture and stir until just combined; small lumps are fine.
Baking
- Pour the batter into the prepared loaf pan and tap it gently on the counter to remove large air bubbles.
- Bake for about 50 to 65 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Cool in the pan for 10 to 15 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Optional add-ins include chocolate chips, chopped pecans, or walnuts. For a fun twist, you can bake the batter as muffins, checking them at 18 to 22 minutes.
