  • 1 cup gluten free oat flour Can blend gluten-free oats into a flour.
  • 1 scoop protein powder Vanilla whey or plant-based blend works.
  • 2 large eggs Helps bind the batter.
  • 1 cup milk Any type of milk works.
  • 1 tbsp baking powder Provides lift to the pancakes.
  • 1/2 cup Greek yogurt or mashed banana Yogurt for tangy flavor, banana for sweetness.

Preparation
  1. In a bowl, whisk together oat flour, protein powder, baking powder, and a pinch of salt.
  2. In another bowl, whisk eggs, milk, and Greek yogurt (or mashed banana).
  3. Pour wet ingredients into dry ingredients and stir until just combined. Let the batter sit for 2 to 3 minutes to thicken slightly.
Cooking
  1. Heat a nonstick pan over medium to medium low and lightly grease it.
  2. Scoop batter onto the pan and cook until bubbles form and edges look set, then flip.
  3. Cook the second side until golden and cooked through.

Notes

Don't overmix the batter and control the heat for best results. Letting the batter rest improves texture.
