  • 1 pound pork shoulder or pork loin, cut into 1 inch cubes Pork shoulder is recommended for juiciness.
  • 1/4 cup olive oil Helps keep the meat juicy.
  • 3-4 cloves garlic, minced Add more for extra flavor.
  • 2 tablespoons lemon juice Adds brightness to the marinade.
  • 1 tablespoon dried oregano This is the key flavor in Greek dishes.
  • 1 teaspoon salt To taste.
  • 1 teaspoon black pepper To taste.
  • 1 pinch paprika Optional, for additional flavor.
  • 1 pinch cumin Optional, for additional flavor.
  • Skewers metal or soaked wooden skewers Soak wooden skewers for 20-30 minutes before use.

Preparation
  1. Cut the pork into even cubes, making sure they are similar in size.
  2. In a bowl, mix the olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add paprika and cumin if using.
  3. Add the pork to the marinade and toss well to coat. Let it marinate for at least 30 minutes, preferably 2-4 hours or overnight in the fridge.
Grilling
  1. Thread the marinated pork onto the skewers, ensuring they are not packed too tightly.
  2. Preheat the grill to medium-high heat. Grill the skewers for about 8-12 minutes, turning every couple of minutes until browned and cooked through.
  3. Remove from the grill and let the skewers rest for a few minutes before serving.

Notes

Serve with pita bread, tzatziki, salads, or roasted potatoes for a complete meal. Marinating longer enhances the flavor, and leftovers are great in pitas, salads, or rice bowls.
