Preparation
- Blanch the pistachios if desired for a bright green look. Otherwise, skip this step.
- Blend the pistachios in a food processor until they form a thick paste, scraping down the sides as necessary.
- Add sugar or honey, salt, and oil to the blended pistachios. Blend until smooth.
- Optionally, stir in melted white chocolate and tahini to enhance flavor and texture.
Chilling
- Chill the filling for 15 to 30 minutes before using it in chocolate shells.
Chocolate Tempering
- Chop chocolate into small pieces. Microwave about two-thirds of it in short bursts, stirring frequently.
- Once mostly melted with a few lumps, stir until smooth. Then add the remaining chocolate and stir until fully melted.
Assembly
- Spread a thin layer of tempered chocolate in molds, chill it, then add the pistachio filling and toasted kataifi.
- Seal with more tempered chocolate and chill until set.
Notes
Store the pistachio cream spread in a clean jar in the fridge for about 1 week. Allow it to sit at room temperature for 10 minutes before use. Chocolate bars are best stored in a cool place or in the fridge in an airtight container. Enjoy the creamy filling in other desserts like yogurt or oatmeal.
