Main Ingredients
  • 2 cups shredded sharp cheddar cheese Freshly shredded for best texture
  • 1/2 cup mayonnaise Adjust to taste
  • 1 cup jarred pimentos Drained well
  • 4 oz cream cheese Softened (optional but makes it smoother)
  • 1 tsp garlic powder Or a tiny bit of grated garlic
  • 1 tsp onion powder Optional
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper Or hot sauce, to taste
  • to taste tsp salt Only if needed, as cheddar can be salty

Method
 

Preparation
  1. Shred your cheddar cheese and set aside.
  2. In a bowl, stir together mayo and softened cream cheese until smooth.
  3. Fold in the shredded cheddar and drained pimentos.
  4. Season with garlic powder, black pepper, and cayenne or hot sauce.
  5. Taste and adjust the seasoning. Chill for at least 30 minutes if time allows.

Notes

Serve with crackers, pretzel thins, celery sticks, or toasted baguette slices. This dip can be made a day ahead for better flavor.
