Easy Pikelets

A quick and foolproof recipe for fluffy mini pancakes, perfect for snacks or breakfast.

Ingredients
  

Dry Ingredients
  • 1 cup self-raising flour Can substitute with plain flour + 1 teaspoon baking powder.
  • 2 tablespoons sugar Can substitute with honey or maple syrup.
  • 1 pinch salt
Wet Ingredients
  • 1 egg For egg-free version, can substitute with unsweetened applesauce or flaxseed 'egg'.
  • 3/4 cup milk Dairy-free option: almond or oat milk.
Cooking
  • 1-2 tablespoons butter or oil For greasing the pan.

Method
 

Preparation
  1. In a large bowl, combine the self-raising flour, sugar, and salt.
  2. In another bowl, beat the egg and milk together.
  3. Pour the wet ingredients into the dry ingredients and stir until mostly smooth. Lumps are okay.
Cooking
  1. Heat a nonstick pan over medium heat and grease with a bit of butter or oil.
  2. Drop about a tablespoon of batter for each pikelet onto the pan.
  3. When bubbles start to pop on top (about a minute), flip them over.
  4. Cook for another thirty seconds until golden brown.
  5. Remove from pan and let cool slightly before serving.

Notes

Try adding chocolate chips or berries for variations. Serve with honey, jam, or for a savory twist, cream cheese and smoked salmon.
