Preparation
- In a large bowl, combine the self-raising flour, sugar, and salt.
- In another bowl, beat the egg and milk together.
- Pour the wet ingredients into the dry ingredients and stir until mostly smooth. Lumps are okay.
Cooking
- Heat a nonstick pan over medium heat and grease with a bit of butter or oil.
- Drop about a tablespoon of batter for each pikelet onto the pan.
- When bubbles start to pop on top (about a minute), flip them over.
- Cook for another thirty seconds until golden brown.
- Remove from pan and let cool slightly before serving.
Notes
Try adding chocolate chips or berries for variations. Serve with honey, jam, or for a savory twist, cream cheese and smoked salmon.
