Ingredients
  

Dill Butter Blend
  • 1 to 2 tablespoons softened butter Use room temperature butter.
  • 1 to 2 teaspoons chopped fresh dill Or a good pinch of dried dill.
Sandwich Ingredients
  • 2 slices bread Use sourdough, white, rye, or your preferred type.
  • 2 to 3 slices melty cheese Cheddar, provolone, Swiss, or a mix.
  • as needed pickle slices Classic dill pickle chips are recommended. Pat dry before using.
  • optional mustard A small smear for extra zip.

Method
 

Preparation
  1. Mix your butter and dill in a small bowl. If your butter is too cold, microwave it for a few seconds until soft.
  2. Spread the dill butter on one side of each bread slice generously.
Cooking
  1. Heat a skillet on medium. Place one slice of bread butter side down.
  2. Layer cheese, pickle slices, and another slice of cheese on the bread.
  3. Top with the second slice of bread, butter side up.
  4. Cook for 3 to 5 minutes per side, pressing gently with a spatula. Lower the heat if the bread browns too quickly.
  5. Let it rest for a minute before slicing to help the cheese settle.

Notes

Pat pickle slices dry to prevent sogginess. Keep the heat medium or medium low to allow cheese to melt without burning the bread. Grated cheese melts more evenly. Can use a lid to trap heat if melting takes too long. Optional ingredients like mustard, onions, or bacon can be added for variety.
