  • 1 box mini phyllo shells Available in the freezer section.
  • 8 oz cream cheese, softened Can use regular cream cheese.
  • 1 to 2 tablespoons honey or powdered sugar Optional for sweetness.
  • 1 jar pepper jelly Red is classic, but any kind works.
  • to taste Fresh fruit for topping (berries, kiwi, grapes, or mandarin segments) Choose fruits that hold their shape well.
  • to taste Optional extras (chopped pistachios, lemon zest, mint) Add for extra flavor and texture.

Method
 

Preparation
  1. Heat the oven to the temperature recommended on the phyllo shell box, usually around 350°F.
  2. Place the empty phyllo shells on a tray and bake for a few minutes to crisp them. Let them cool.
Filling
  1. In a bowl, stir the softened cream cheese until smooth. Mix in honey or powdered sugar if desired.
  2. Spoon or pipe a small amount of cream cheese into each shell, avoiding overfilling.
  3. Add a small spoonful of pepper jelly on top of the cream cheese.
  4. Top with your choice of fresh fruit.
  5. Serve immediately or as close to serving time as possible.

Notes

To keep phyllo cups crisp, fill them close to serving time and store baked shells uncovered at room temperature if using the same day. Cream cheese filling can be prepared ahead and kept in the fridge.
