  • 1 cup Creamy peanut butter Natural or regular peanut butter works
  • 2 cups Old fashioned oats
  • 1/2 cup Honey Can substitute with maple syrup
  • 1/2 cup Mini chocolate chips Use mini chips to prevent melting
  • 1 pinch Salt
Optional ingredients
  • 1 tsp Vanilla extract Optional but nice to include
  • 1-2 tablespoons Ground flax or chia seeds Optional for added nutrition

Method
 

Preparation
  1. In a bowl, mix peanut butter, honey, and a pinch of salt until it looks smooth and glossy.
  2. Stir in oats using a sturdy spoon, as the mixture will thicken quickly.
  3. Fold in mini chocolate chips last to prevent melting.
  4. Chill the bowl for 10 to 15 minutes if the mixture feels sticky.
  5. Roll mixture into small balls, about 1 inch in diameter.

Notes

Store in a sealed container in the fridge for up to 1 week or freeze for 2 to 3 months. Let bites sit for 5 minutes after taking them from the fridge to soften.
