Peach Filling
  • 6-7 pieces medium peaches Ripe peaches for the best flavor.
  • 1/3 cup sugar Brown sugar adds deeper flavor.
  • 1 tablespoon lemon juice Balances sweetness and keeps flavor bright.
  • 2 tablespoons cornstarch Thickens the filling.
  • 1 pinch salt
Oat Topping
  • 1 cup old fashioned oats Provides classic crumble texture.
  • 1/2 cup flour Holds the topping together.
  • 1/2 cup brown sugar Adds caramel flavor and color.
  • 1 teaspoon cinnamon
  • 1 pinch salt
  • 1/2 cup butter Cold and cubed.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease an 8x8 baking dish.
  2. Slice the peaches and toss them with sugar, lemon juice, cornstarch, and a pinch of salt. Pour into the baking dish.
Making the Oat Topping
  1. In a bowl, mix oats, flour, brown sugar, cinnamon, and salt.
  2. Add cold cubed butter and work it into the mixture until it resembles chunky crumbs.
Baking
  1. Sprinkle the oat topping evenly over the peaches.
  2. Bake for 35 to 45 minutes, until the fruit is bubbling and the topping is golden brown.
  3. Let it cool for 10 to 15 minutes before serving.

Notes

Peeling peaches is optional. If using frozen peaches, do not thaw completely. You can adjust sugar based on the peaches' sweetness.
