Preparation
- Set the burrata on the counter to warm for 10 to 15 minutes before serving.
- If grilling peaches, slice them into wedges and brush lightly with olive oil.
- Preheat the grill or grill pan. Grill peaches cut side down for 1 to 2 minutes per side until grill marks appear.
- Let grilled peaches cool slightly before adding them to the salad.
Assembly
- Spread the arugula or mixed greens on a large platter.
- Arrange the grilled peach slices on top of the greens.
- Tuck torn prosciutto pieces in between the peaches.
- Tear the burrata and place pieces in several spots on the platter.
- Drizzle with olive oil and balsamic glaze, then sprinkle with flaky salt and black pepper.
- Add toasted nuts on top for extra crunch if desired.
Notes
Serve with crusty bread, as a side to grilled chicken, or as a starter for a meal. Variations include using nectarines or plums, adding tomatoes, or making it vegetarian by omitting prosciutto.
