Noodles and Sauce
  • 8 oz chow mein noodles Can substitute with yakisoba or thin spaghetti.
  • 3 tbsp soy sauce Regular or low sodium.
  • 2 tbsp oyster sauce Hoisin can be substituted if needed.
  • 1 tbsp brown sugar Provides sweetness to balance the salt.
  • 1 tsp sesame oil Adds aroma; use sparingly.
  • 1 tbsp neutral oil For stir frying (e.g., avocado or canola).
Vegetables
  • 2 cups shredded green cabbage Classic choice for chow mein.
  • 1 cup sliced celery Provides crunch.
  • 1 medium onion Yellow or white, sliced thin.
  • 2 cloves garlic Minced for flavor.

Method
 

Preparation
  1. In a small bowl, combine soy sauce, oyster sauce, brown sugar, and sesame oil. Add a splash of water if sauce looks too thick.
  2. Cook noodles according to package instructions, drain, and toss with a small amount of oil to prevent sticking.
Cooking
  1. Heat a large skillet over medium-high heat and add neutral oil.
  2. Add sliced onions and celery, cooking for a couple of minutes until softened but still crunchy.
  3. Add minced garlic and sauté for about 30 seconds, ensuring it doesn't burn.
  4. Stir in the shredded cabbage, cooking until it slightly softens but remains crisp.
  5. Add the cooked noodles and pour the sauce over. Toss everything using tongs for 1-2 minutes, until the noodles are glossy and evenly coated.

Notes

Do not overcook the noodles. Keep veggies thin for a quicker cook and better texture. Taste before serving to adjust seasoning. Leftovers can be stored in the fridge for up to 3 days.
