Preparation
- Soak the rice noodles in a big bowl with warm water until bendy but still firm, about 15 to 25 minutes. Drain and set aside.
- Prepare the Pad Thai sauce by mixing tamarind paste, fish sauce, brown sugar, soy sauce (if using), chili flakes or sriracha, and set aside.
Cooking
- Heat a large pan or wok over medium-high heat. Add the oil, then your protein choice. Cook until done, then move to the side of the pan or remove to a plate.
- Add minced garlic and cook for about 10 seconds. Push to the side, crack in the eggs, and scramble them in the pan.
- Add the soaked and drained noodles to the pan and pour the sauce over them. Toss and stir for a few minutes until the noodles finish cooking in the sauce. If it looks dry, add a splash of water.
- Finally, add bean sprouts and green onions, warming them for a short time, then turn off the heat. Top with crushed peanuts and squeeze lime juice over everything.
Notes
Feel free to adjust the protein and additional toppings to your liking. Adding a squeeze of lime right before eating enhances the flavor. Serve with extras like chili flakes or chopped peanuts for customization.
