Ingredients

  • 1/2 cup rolled oats not instant, not steel cut
  • 1/2 cup milk of choice dairy or non-dairy
  • 1/3 cup plain Greek yogurt or any yogurt you like
  • 1 tbsp cocoa powder
  • 1 to 2 tbsp peanut butter
  • 1 tbsp chia seeds optional, but thickens nicely
  • 1 to 2 tsp maple syrup or honey adjust to taste
  • 1 pinch salt enhances chocolate flavor
Optional Toppings
  • to taste sliced banana
  • to taste chocolate chips
  • to taste chopped peanuts

Method
 

Mixing
  1. Stir the cocoa powder into the milk and yogurt until smooth and chocolatey.
  2. Add the rolled oats, chia seeds, salt, and sweetener, then swirl in the peanut butter.
Refrigeration
  1. Cover and refrigerate for at least 6 hours, preferably overnight.
Serving
  1. In the morning, stir the mixture and add a splash of milk if desired for a looser consistency.

Notes

Overnight oats can be heated in a microwave if you prefer a warm breakfast. Store in the fridge for up to 3 days for best texture.
