  • 2 pounds chicken wings, flats and drums
  • 1 tablespoon baking powder aluminum free
  • 1 teaspoon kosher salt plus more to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • to taste fresh ground black pepper
  • 3/4 to 1 cup BBQ sauce use your favorite
  • 1 tablespoon honey or brown sugar optional for extra gloss

Preparation
  1. Pat the wings very dry with paper towels.
  2. Toss wings with baking powder, salt, garlic powder, paprika, and pepper.
  3. Line a sheet pan with foil and set a wire rack on top. Lightly oil the rack.
  4. Spread wings in a single layer.
Cooking
  1. Bake at 425°F for 35 minutes, flipping once at the 20-minute mark.
  2. Warm the BBQ sauce with honey in a small pan until it is loose and brushable.
  3. Brush wings generously with the sauce and return to the oven for 8 to 10 minutes.
  4. Flip and brush again if desired, then bake for an additional 5 minutes.
  5. For extra caramelized edges, broil for 1 to 2 minutes, watching closely.

Notes

Preheat the oven fully, line your pan, and do not crowd the wings for optimal crispiness. If using frozen wings, thaw them fully and pat dry. For spicier wings, stir hot sauce or chili flakes into your BBQ sauce.
