Ingredients
  

For the Almond Sponge
  • 4 large eggs
  • 1 cup sugar
  • 1 cup almond flour Substitutions allowed
  • 1/4 cup all-purpose flour Or gluten free blend
  • 1/4 cup butter Melted
  • 4 large egg whites For lift
For the Coffee Syrup
  • 1 cup strong brewed coffee or espresso Adjust for strength
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
For the Coffee Buttercream
  • 1 cup butter Softened
  • 3 cups powdered sugar
  • 1/4 cup espresso
  • 1 pinch salt Enhances flavor
For the Chocolate Ganache
  • 8 ounces chocolate Semi-sweet or dark
  • 1 cup heavy cream
Optional
  • 1 thin layer chocolate Base layer for neat slices

Method
 

Preparation
  1. Preheat the oven and line a sheet pan with parchment.
  2. Prepare the almond sponge batter and spread it evenly on the pan.
  3. Bake until springy and golden; avoid overbaking.
Make Coffee Syrup
  1. Warm coffee and sugar together until dissolved, then cool.
Make Coffee Buttercream
  1. In a mixing bowl, beat butter until smooth.
  2. Gradually add powdered sugar, then mix in espresso and salt.
Make Chocolate Ganache
  1. Heat cream and pour over chopped chocolate; let sit for a minute.
  2. Stir until glossy and let thicken.
Assembly
  1. Cut almond sponge into equal pieces.
  2. Layer sponge with coffee syrup, buttercream, then another sponge piece.
  3. Repeat with ganache before adding the final sponge layer.
Chill and Serve
  1. Chill for at least 2 hours before trimming and slicing.
  2. Use a hot knife for clean slices.

Notes

Opera cake improves in flavor after chilling. Store in an airtight container for up to 4 days.
