Ingredients
  

For the Chicken
  • 1 lb boneless, skinless chicken breasts Diced into bite-sized pieces
  • 1 tsp salt To season the chicken
  • 1/2 tsp black pepper To season the chicken
  • 1 tsp Italian seasoning Optional seasoning for chicken
For the Sauce
  • 3 tbsp butter For the garlic butter sauce
  • 4 cloves garlic Minced
  • 3 cups chicken broth Low-sodium preferred
  • 1 cup heavy cream To make the sauce creamy
For the Tortellini
  • 12 oz refrigerated cheese tortellini Cooks quickly and makes sauce creamy
Optional Enhancements
  • 1/2 cup Parmesan cheese Grated for extra richness
  • 1/2 tsp red pepper flakes For a hint of spice
  • 1/4 cup fresh parsley or basil Chopped, added at the end
  • 1 cup spinach Optional, added at the end for extra nutrients

Method
 

Preparation
  1. Season the diced chicken with salt, pepper, and Italian seasoning.
  2. Mince the garlic and set aside.
Cooking
  1. In a large pot, melt the butter over medium heat.
  2. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Add the minced garlic and cook until fragrant, about 1 minute.
  4. Pour in the chicken broth and bring it to a simmer.
  5. Add the tortellini and reduce to a gentle simmer.
  6. Cook the tortellini as per package instructions, usually around 3-5 minutes.
  7. Stir in the heavy cream and let it simmer until the sauce thickens, about 2-3 minutes.
  8. Optional: Stir in grated Parmesan cheese and red pepper flakes.
  9. If using, add spinach at the end and stir until wilted.
  10. Taste and adjust seasoning with salt, pepper, or lemon juice if needed.

Notes

Leftovers keep well in the fridge for up to 3 days. Reheat gently on the stovetop with a splash of broth or cream to loosen the sauce.
