  • 1.5 cups Medjool dates, pitted (about 10 to 12) Ensure dates are soft. If dry, soak in hot water before use.
  • 1/4 cup unsweetened cocoa powder, plus more for rolling Use extra for rolling if desired.
  • 1/3 cup nut butter (almond butter or peanut butter) Choose your favorite nut butter.
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt Just a pinch enhances chocolate flavor.
Optional Additions
  • 2-3 tablespoons mini chocolate chips or shredded coconut Add as desired for extra flavor.

Preparation
  1. If dates are dry, soak in hot water for 5 to 10 minutes, then drain and pat dry.
  2. Add dates, cocoa powder, nut butter, vanilla, and salt to a food processor.
  3. Blend until a sticky dough forms. If too dry, add 1 teaspoon of water or a bit more nut butter.
  4. Scoop and roll the mixture into balls. Optionally, roll them in cocoa powder, coconut, or chopped nuts.
  5. Chill for 15 minutes for the best texture.

Notes

These date balls taste like brownie bites. Store in an airtight container in the fridge for up to 1 week. Freeze for longer storage, up to 2-3 months. Let them sit out for a few minutes before eating after freezing.
