Method

Preparing the Dough
  1. In a large bowl, combine the flour, yogurt, instant yeast, salt, and sugar.
  2. Gradually add warm water or milk until the dough comes together.
  3. Knead the dough for about 5-10 minutes until smooth and elastic.
  4. Cover the dough with a cloth and let it rest for at least 45 minutes to 2 hours.
Cooking the Naan
  1. Preheat a cast iron skillet or heavy pan over medium-high heat.
  2. Divide the rested dough into 6-8 equal pieces and roll them into balls.
  3. Flatten each ball into a disc about 1/4 inch thick.
  4. Place the dough on the hot skillet and cook for 1-2 minutes on each side, or until golden brown and bubbly.
  5. Remove from heat and brush immediately with the garlic butter mixture.
  6. Keep finished naan warm under a clean towel while cooking the rest.

Notes

For variations, consider adding cheese, red pepper flakes, herbs, or onions to the dough. Store any leftovers sealed to avoid drying out, and reheat before serving.
