Easy Mushroom Stroganoff

  • 8 to 12 oz mushrooms, sliced (cremini or white mushrooms) Use fresh for best flavor.
  • 1 small onion, chopped Yellow or white onion works well.
  • 2 cloves garlic, minced Fresh garlic for best flavor.
  • 2 tbsp butter or olive oil For frying the mushrooms.
  • 1 tbsp flour For thickening the sauce.
  • 1.5 cups broth (vegetable or beef style broth) Adjust for flavor preference.
  • 1 tbsp Worcestershire sauce Optional for extra depth.
  • 1/2 tsp paprika For seasoning.
  • 1/2 to 3/4 cup sour cream (or plain Greek yogurt) Add for creaminess.
  • Salt and pepper to taste Season in layers.
  • Egg noodles, rice, or mashed potatoes for serving Choose your preferred base.

  1. Start your noodles or rice. Get that cooking first so everything finishes around the same time.
  2. Brown the mushrooms. Heat butter or oil in a large skillet. Add mushrooms in an even layer. Let them sit a couple of minutes before stirring so they get color. Add a pinch of salt.
  3. Add onion and garlic. Once the mushrooms look golden and a little smaller, stir in onion. Cook until soft, then add garlic for about 30 seconds.
  4. Make the sauce base. Sprinkle flour over everything and stir for a minute. It will look a bit pasty at first, that is normal.
  5. Pour in broth slowly. Stir as you pour so you do not get flour lumps. Add Worcestershire and paprika. Let it simmer until slightly thick.
  6. Turn down the heat and add sour cream. This is the creamy moment. Keep it gentle. Stir until smooth. Taste and adjust salt and pepper.
  7. Serve it up. Spoon over noodles and add a little extra black pepper on top. If you are feeling fancy, chopped parsley is nice.

Notes

This recipe is flexible; swap the sour cream for Greek yogurt or cream cheese if needed. Add extra veggies or protein for a heartier meal. Keep pasta water to adjust sauce consistency if needed.
