Easy Miso Soup

Ingredients
  

For the soup
  • 3 to 4 cups water or prepared dashi Use traditional dashi or dashi powder for convenience.
  • 2 to 3 tablespoons miso paste Start small, add more if needed.
  • 1/2 cup cubed soft or medium tofu Adds protein and creaminess.
  • 1 to 2 tablespoons dried wakame seaweed Add for flavor and texture.
  • 1 to 2 sliced green onions Top for garnish.
  • optional a small piece of kombu or a pinch of dashi powder Enhances umami flavor.

Method
 

Cooking Instructions
  1. Heat your water or dashi in a small pot until it is hot but not aggressively boiling.
  2. If using dried wakame, toss it in now so it has a minute to plump up.
  3. Scoop some hot broth into a mug or bowl. Whisk in the miso paste until smooth.
  4. Turn the stove to low. Pour the miso mixture back into the pot and stir gently.
  5. Add tofu and let it warm through for about 1 to 2 minutes. Do not boil.
  6. Taste and adjust. If it needs more flavor, add a little more miso. Top with green onions and serve right away.

Notes

Store the broth separately from the tofu and seaweed to maintain texture if having leftovers.
