Easy Miso Glazed Salmon

  • 4 pieces salmon fillets (about 5 to 6 oz each) Skin on fillets recommended for juiciness.
For the Miso Glaze
  • 2 tablespoons white miso paste Mild and slightly sweet; ideal for this recipe.
  • 1 to 1.5 tablespoons honey or brown sugar Adjust to taste for sweetness.
  • 1 tablespoon soy sauce (or tamari) Use low sodium if sensitive to salt.
  • 1 tablespoon rice vinegar or fresh lemon juice Substitute with apple cider vinegar if unavailable.
  • 1 teaspoon toasted sesame oil Optional, but adds great flavor.
  • 1 small garlic clove, grated Optional for extra flavor.
For Serving
  • to taste green onions and sesame seeds For garnish.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a sheet pan with foil or parchment paper.
  2. In a small bowl, mix together the miso, honey, soy sauce, vinegar, and sesame oil until smooth.
  3. Pat the salmon fillets dry with paper towels to help the glaze stick better.
Cooking
  1. Brush or spoon the miso glaze over the top of each fillet, reserving a tiny bit for a final swipe after baking.
  2. Bake the salmon for about 10 to 12 minutes, depending on thickness. Optional: Broil for 1 to 2 minutes at the end for caramelization.
  3. Sprinkle with green onions and sesame seeds before serving. A squeeze of lemon can brighten the dish.

Notes

For more sauce, double the glaze ingredients and reserve half before mixing with raw fish. Use leftover salmon in rice with soy sauce and green onions for lunch.
