  • 4 pieces Salmon fillets, skin on or skin off
  • 1/4 cup Sun dried tomatoes in oil Best for flavor and richness
  • 2 cloves Garlic, minced Fresh if possible
  • 1 cup Heavy cream For the creamy sauce
  • 1/2 cup Parmesan cheese, grated Adds thickness and salty bite
  • 2 cups Fresh spinach (optional) For color
  • 1 piece Lemon Just a squeeze at the end

Method
 

Preparation
  1. Pat the salmon dry and season with salt, pepper, and Italian seasoning.
  2. Heat a skillet over medium-high heat and add a spoonful of the oil from the sun dried tomatoes.
Cooking
  1. Sear the salmon fillets for about 4-5 minutes on each side until cooked to your preference.
  2. Remove the salmon from the skillet and set aside.
  3. In the same skillet, add minced garlic and sun dried tomatoes. Cook for about 1 minute.
  4. Reduce the heat to low, add heavy cream, and stir well.
  5. Gradually add parmesan cheese and allow the sauce to simmer gently until thickened.
  6. If using, add spinach and allow it to wilt.
  7. Return the salmon to the skillet to warm through.
  8. Finish with a squeeze of fresh lemon juice before serving.

Notes

Best served hot with side options like mashed potatoes, pasta, or crusty bread. Make extra sauce as everyone will want seconds!
