Preparation
- Pat the salmon dry and season with salt, pepper, and Italian seasoning.
- Heat a skillet over medium-high heat and add a spoonful of the oil from the sun dried tomatoes.
Cooking
- Sear the salmon fillets for about 4-5 minutes on each side until cooked to your preference.
- Remove the salmon from the skillet and set aside.
- In the same skillet, add minced garlic and sun dried tomatoes. Cook for about 1 minute.
- Reduce the heat to low, add heavy cream, and stir well.
- Gradually add parmesan cheese and allow the sauce to simmer gently until thickened.
- If using, add spinach and allow it to wilt.
- Return the salmon to the skillet to warm through.
- Finish with a squeeze of fresh lemon juice before serving.
Notes
Best served hot with side options like mashed potatoes, pasta, or crusty bread. Make extra sauce as everyone will want seconds!
