  • 1 pack shelf stable gnocchi Alternatively, use refrigerated or thawed frozen gnocchi.
  • 1 can crushed tomatoes Can substitute with a good marinara.
  • 2 tbsp tomato paste Adds deeper flavor.
  • 1 cup heavy cream Half and half can be used for a lighter version.
  • 1/2 cup jarred sun dried tomatoes Use ones in oil for best texture.
  • 1/2 cup fresh grated Parmesan cheese Pecorino can be used as a substitute.
  • 1/4 tsp red pepper flakes For a hint of spice.
Optional Add-Ins
  • 1 cup spinach or kale Stir in at the end until just wilted.
  • 1 cup diced zucchini Can be sautéed first for better flavor.
  • 1 cup sliced mushrooms Sauté first to avoid a watery sauce.

Method
 

Preparation
  1. In a large skillet, heat the crushed tomatoes and tomato paste over medium heat.
  2. Stir in the heavy cream and allow the sauce to simmer gently.
  3. Add the sun dried tomatoes and simmer for about 5 minutes.
  4. Add the gnocchi to the sauce and cook until they are heated through, about 3-5 minutes.
  5. Stir in the grated Parmesan cheese and red pepper flakes, mixing until well combined.
  6. If adding any vegetables, do so in the last few minutes, stirring gently.

Notes

For a little upgrade, consider browning the gnocchi in a pan with butter or oil before adding to the sauce. Store leftovers in the fridge and reheat with a splash of broth or cream.
