Ingredients

  • 3 cups cooked short pasta like rotini or bowties Pasta should be rinsed and cooled.
  • 1 cup cherry tomatoes, cut in halves
  • 1 cup cucumber, diced Keep pieces larger to avoid excess moisture.
  • 1/2 cup shredded carrots or matchstick carrots
  • 1/2 cup mozzarella pearls or cubed cheese Use dairy-free alternative if needed.
  • 1/4 cup sliced black olives (optional)
  • 2 to 4 tablespoons Italian dressing or your favorite vinaigrette Add more if needed after chilling.

Method
 

Preparation
  1. Cook the pasta according to package instructions, then rinse it with cold water and drain well.
  2. Add the cooled pasta to a large bowl.
  3. Toss in the cherry tomatoes, cucumber, carrots, and cheese.
  4. Mix in 2 tablespoons of the dressing and taste, adding more if needed.
  5. Cover and refrigerate for at least 1 hour before packing.

Notes

Portion the salad immediately after it cools to save time in the morning. Use a well-sealed container to maintain freshness. This salad is best consumed within 3 days.
