  • 1 medium Bell pepper, chopped Adds color and flavor.

  • 4 cups Broth (chicken or beef) Use low sodium for more control.
  • 1 teaspoon Salt Season to taste.
  • 1 teaspoon Black pepper Season to taste.
  • 1 teaspoon Italian seasoning Adds flavor.
  • 1/4 teaspoon Chili flakes Optional for a kick.
  • 1 tablespoon Olive oil For sautéing.

Method
 

Cooking Instructions
  1. Heat a large pot on medium heat and add the olive oil.
  2. Add onion and celery, cook for about 3 to 4 minutes until they start to soften.
  3. Stir in garlic and cook for 30 seconds, just until fragrant.
  4. Add ground turkey or beef and cook until browned, breaking it up as you go.
  5. Add bell pepper, chopped cabbage, diced tomatoes, broth, and seasonings.
  6. Bring it to a gentle boil, then lower to a simmer.
  7. Simmer for about 20 to 25 minutes, until the cabbage is tender but not mushy.
  8. Taste and adjust salt and pepper as needed, and add more Italian seasoning if desired.

Notes

Do not overcook the cabbage. Store in glass containers to keep flavor fresher. This soup is versatile and can be made vegetarian or creamy with substitutions.
