Ingredients
  

Main ingredients
  • 1 pound ground beef Cooked and seasoned.
  • 1 packet taco seasoning Or your own mix (chili powder, cumin, garlic powder, salt).
  • 1/3 cup water To help season the beef.
  • 2 to 3 cups shredded cheese e.g., Cheddar, Monterey Jack, Pepper Jack.
  • 1 can black beans Rinsed (optional but filling).
  • 1 cup pico de gallo Or chopped tomatoes and onion.
  • as needed pickled jalapenos For heat.
  • as needed sour cream For topping.
  • as needed guacamole or sliced avocado For topping.
  • as needed chopped cilantro For garnish.
  • as needed lime wedges For serving.
  • 1 bag tortilla chips Sturdy restaurant style recommended.

Method
 

Preparation
  1. Brown the beef in a skillet over medium heat until no pink is left; drain excess grease if necessary.
  2. Stir in taco seasoning and water, and let it simmer for a few minutes until it appears saucy.
  3. Preheat the oven to 400°F (200°C). Line a large sheet pan with foil or parchment.
  4. Layer half of the tortilla chips on the pan, followed by half of the beef mixture, beans if using, and half of the cheese. Repeat the layers once more.
  5. Bake in the preheated oven for 8 to 10 minutes, until the cheese is fully melted and the chips' edges look toasty.
  6. After baking, add the cold toppings like pico de gallo, jalapenos, dollops of sour cream, guacamole, and garnish with cilantro and a squeeze of lime.

Notes

Serve immediately to keep nachos crispy. Consider pairing with a simple board of creamy, spicy dips for variety.
