Ingredients
  

For the Fish
  • 2 fillets orange roughy fillets Approximately 6 ounces each
  • 1 tablespoon olive oil For brushing on the fish
  • 1 clove garlic, minced
  • 1 tablespoon fresh parsley, chopped Can substitute with thyme if preferred
  • 1 tablespoon fresh cilantro, chopped Can be omitted if not preferred
  • 1 medium lime, zested and juiced Zest adds flavor and aroma
  • to taste fine sea salt For seasoning
  • to taste cracked black pepper For seasoning

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C) and line a small sheet pan with parchment for easy cleanup.
  2. Pat the orange roughy fillets dry with paper towels.
Seasoning
  1. In a bowl, mix the olive oil, lime zest, minced garlic, chopped parsley, and chopped cilantro.
  2. Rub this mixture over the fish fillets evenly.
  3. Sprinkle the fillets with fine sea salt and cracked black pepper on both sides.
Cooking
  1. Place the seasoned fillets on the prepared sheet pan and bake in the preheated oven for 10 to 12 minutes, or until the fish flakes easily with a fork and appears opaque.
  2. Once done, squeeze fresh lime juice over the fish to finish.

Notes

Pat the fish dry before seasoning for better browning. Ensure not to drown the fish in oil; a light brush or spray is sufficient. Serve with light, colorful sides to complement the dish.
