Crust
  • 1 pre-made graham cracker crust Store bought or homemade
Filling
  • 8 oz cream cheese Softened for easy mixing
  • 14 oz sweetened condensed milk
  • 1/2 cup lemon juice Fresh is best, but bottled works
  • 1 tbsp lemon zest Optional, but highly recommended for extra flavor
  • 8 oz whipped topping or homemade whipped cream Use soft peaks for easy folding
  • 1 pinch salt To balance sweetness

Method
 

Preparation
  1. If using a store-bought graham cracker crust, skip to step 2. For homemade, crush graham crackers, mix with melted butter and sugar, then press into a pie dish and chill.
  2. In a mixing bowl, beat softened cream cheese until smooth.
  3. Add sweetened condensed milk and mix until silky.
  4. Slowly pour in lemon juice while mixing, allowing the mixture to thicken.
  5. Add lemon zest and a pinch of salt, mixing well.
  6. Fold in whipped topping until fluffy and well combined.
  7. Spread the filling into the chilled crust and smooth the top.
  8. Cover and refrigerate for at least 6 hours, preferably overnight.
Serving
  1. Slice and serve cold, adding extra lemon zest or slices for garnish if desired.

Notes

For best results, soften cream cheese before mixing. Chill longer for a firmer texture. Fresh ingredients enhance flavor.
