Preparation
- Rinse and dry the asparagus well. Snap or trim off the woody ends.
- Lay a spear flat on a cutting board and use a vegetable peeler to shave long strips.
Making the Dressing
- In a large bowl, whisk together olive oil, lemon juice, lemon zest, salt, and black pepper. Optionally add Dijon mustard.
Assembly
- Add the shaved asparagus to the dressing and toss gently.
- Add parmesan and toss again. Taste and adjust seasoning if necessary.
- Serve immediately to retain crispness and perky texture.
Notes
Best served fresh; store leftovers in the fridge but expect some softening of the asparagus. Shave asparagus ahead of time and store with a paper towel to catch moisture. Dressing and parmesan should be kept separate until ready to serve.
