  • 1 bunch Asparagus Go for medium to thick spears for easier shaving.
  • 1 large Lemon (zest and juice) Fresh lemon is recommended.
  • 3 tablespoons Olive oil Choose fruity and smooth olive oil for best flavor.
  • 1/2 cup Parmesan Shaved or finely grated, adjust based on preference.
  • to taste Salt Don’t be shy with seasoning.
  • to taste Black pepper Don’t be shy with seasoning.
Optional Extras
  • Toasted almonds, pistachios, or sunflower seeds For added crunch.
  • 1 teaspoon Dijon mustard Adds a punchy flavor, optional.
  • 1 handful Arugula or mixed greens If you want a larger salad.

Method
 

Preparation
  1. Rinse and dry the asparagus well. Snap or trim off the woody ends.
  2. Lay a spear flat on a cutting board and use a vegetable peeler to shave long strips.
Making the Dressing
  1. In a large bowl, whisk together olive oil, lemon juice, lemon zest, salt, and black pepper. Optionally add Dijon mustard.
Assembly
  1. Add the shaved asparagus to the dressing and toss gently.
  2. Add parmesan and toss again. Taste and adjust seasoning if necessary.
  3. Serve immediately to retain crispness and perky texture.

Notes

Best served fresh; store leftovers in the fridge but expect some softening of the asparagus. Shave asparagus ahead of time and store with a paper towel to catch moisture. Dressing and parmesan should be kept separate until ready to serve.
