  • 1 bunch Asparagus Thin to medium stalks are easiest to shave, choose fresh ones with tight tips.
  • 3 tablespoons Olive oil Use a high-quality olive oil.
  • 1.5 tablespoons Fresh lemon juice Use fresh squeezed lemon for the best flavor.
  • 1 teaspoon Lemon zest Adds brightness to the dressing.
  • 1 small clove Garlic, finely grated Optional but enhances flavor.
  • 0.5 teaspoon Dijon mustard Helps blend the dressing.
  • to taste Salt and black pepper Season according to taste.
  • to taste Parmesan cheese, shaved Can use grated, but shaved looks pretty.
  • to taste Toasted almonds, pistachios, or sunflower seeds For added crunch.
Optional Additions
  • 1 handful Arugula or baby spinach Can be added for extra greens.

Method
 

Preparation
  1. Wash the asparagus and pat it dry. Trim the woody ends.
  2. Use a vegetable peeler to shave long ribbons of asparagus.
Mixing the Dressing
  1. In a large bowl, whisk together olive oil, lemon juice, lemon zest, garlic (if using), Dijon mustard, salt, and black pepper.
  2. Add the shaved asparagus to the dressing and toss gently.
Serving
  1. Top with shaved parmesan and your choice of crunchy topping.
  2. Let the salad sit for 5 minutes to soften the asparagus ribbons slightly.

Notes

Avoid overdressing; start with a little dressing and add more if needed. This salad is best fresh, but components can be prepped in advance.
