Preparation
- Heat the olive oil or butter in a big pot over medium heat.
- Add onion, carrots, and celery. Cook for about 6 to 8 minutes until softened and fragrant.
- Add the minced garlic and cook for another 30 seconds.
Cooking
- Pour in the broth and add salt, pepper, thyme, and bay leaf if using.
- Bring to a gentle boil, then reduce to a simmer.
- Let it simmer for about 12 to 15 minutes until veggies are tender.
- Stir in the leftover turkey and simmer for an additional 5 to 8 minutes.
- If adding rice or noodles, stir them in and heat for a minute or two before serving.
- Adjust seasoning with additional salt, pepper, and a squeeze of lemon juice.
Notes
Store leftovers in the fridge for 3 to 4 days. Can freeze without noodles for up to 3 months. Add fresh herbs or lemon juice before serving for extra brightness.
