Easy Instant Pot Pulled Pork — BBQ Sandwich

Ingredients
  

Pork and sauces
  • 3 pounds Pork shoulder or pork butt Boneless is easiest, but bone-in works too.
  • 1 cup BBQ sauce Choose a BBQ sauce you actually like.
  • 1 tablespoon Brown sugar Optional, helps balance tangy sauces.
Spices
  • 1 tablespoon Salt Use generously.
  • 1 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Smoked paprika
Liquid and sides
  • 1 cup Broth, apple juice, or water Used for cooking in the Instant Pot.
  • 6 pieces Buns For serving.
  • to taste Pickles Optional toppings.
  • to taste Coleslaw Optional toppings.

Method
 

Preparation
  1. Cut the pork into 3 to 4 large chunks for even cooking.
  2. Season all sides of the pork generously with salt and spices.
  3. If desired, sear the pork in the Instant Pot for added flavor.
Cooking
  1. Add your chosen liquid to the Instant Pot, then add the seasoned pork.
  2. Pressure cook on high for about 60 minutes, then allow a natural pressure release for 10 to 15 minutes.
Finishing Touches
  1. Shred the pork with a fork and mix in the BBQ sauce until evenly coated.
  2. Optional: Put the shredded pork back on saute mode with the sauce for a couple of minutes to thicken.

Notes

For frozen pork roast, pressure cook the roast until softened, then season and finish cooking. Remember that frozen meat takes longer to come to pressure.
