Ingredients

Main Ingredients
  • 1 lb Boneless skinless chicken thighs Bone-in thighs can also be used, adjust cook time accordingly.
  • 1.5 lbs Yukon Gold potatoes Cut into bite-sized chunks; do not cut too small to prevent mushiness.
  • 1 cup Chicken broth Better than water for flavor.
  • 1 teaspoon Salt Season both the chicken and potatoes.
  • 1 teaspoon Garlic powder For added flavor.
  • 1 teaspoon Onion powder For added flavor.
  • 1 teaspoon Paprika For added flavor.
  • 1 teaspoon Black pepper To taste.

Method

Preparation
  1. Season the boneless chicken thighs with salt, garlic powder, onion powder, paprika, and black pepper.
  2. Cut the Yukon Gold potatoes into bite-sized chunks.
  3. Pour the chicken broth into the Instant Pot.
Cooking
  1. Place the seasoned chicken thighs on top of the potatoes.
  2. Seal the lid and set the Instant Pot to high pressure for 15 minutes.
  3. Once cooking is complete, allow a natural pressure release for 5 minutes, then quick release any remaining pressure.
  4. Check the internal temperature of the chicken; it should reach at least 165°F.
  5. Optional: For a crispy exterior, transfer chicken to a sheet pan and broil for 2-3 minutes.

Notes

Can substitute chicken thighs for breasts. Frozen chicken is acceptable, but add additional cook time. For a slow cooker version, layer potatoes on the bottom and chicken on top, cooking for 6-7 hours on low. Avoid cutting potatoes too small and ensure enough liquid for pressure cooking.
