Ingredients
  

Dry Ingredients
  • 1 cup yellow cornmeal
  • 1/2 cup all purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon sugar (optional) For a savory option, reduce sugar.
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika or Cajun seasoning (optional) Optional for additional flavor.
Wet Ingredients
  • 1/3 cup finely minced onion
  • 1 large egg
  • 3/4 cup buttermilk (plus a splash more if needed)
  • to taste Oil for frying (peanut, canola, or vegetable)

Method
 

Preparation
  1. Mix the dry ingredients (cornmeal, flour, baking powder, salt, and seasonings) in a bowl.
  2. Stir in the onion, coating it with the dry mix.
  3. Whisk together the egg and buttermilk, then pour into the bowl. Stir until just combined; the batter should be thick.
  4. Let the batter sit for 5 to 10 minutes to allow the cornmeal to soften.
Cooking
  1. Heat about 2 inches of oil in a heavy pot. Aim for 350°F.
  2. Scoop small portions of the batter into the hot oil, being careful not to crowd the pot. Fry for 2 to 3 minutes per side until deep golden.
  3. Drain on a wire rack or paper towels, lightly salting while hot.

Notes

Keep the hush puppies small to ensure they cook evenly. Serve with chili, pulled pork, or fried fish for a comforting meal. They can also be reheated in a hot oven around 400°F for 8 to 10 minutes.
