Preparation
- Mix the dry ingredients (cornmeal, flour, baking powder, salt, and seasonings) in a bowl.
- Stir in the onion, coating it with the dry mix.
- Whisk together the egg and buttermilk, then pour into the bowl. Stir until just combined; the batter should be thick.
- Let the batter sit for 5 to 10 minutes to allow the cornmeal to soften.
Cooking
- Heat about 2 inches of oil in a heavy pot. Aim for 350°F.
- Scoop small portions of the batter into the hot oil, being careful not to crowd the pot. Fry for 2 to 3 minutes per side until deep golden.
- Drain on a wire rack or paper towels, lightly salting while hot.
Notes
Keep the hush puppies small to ensure they cook evenly. Serve with chili, pulled pork, or fried fish for a comforting meal. They can also be reheated in a hot oven around 400°F for 8 to 10 minutes.
