Ingredients

  • 1 pound peeled and deveined shrimp, tails off For easier eating
  • 1 cup all-purpose flour For coating
  • 2 large eggs For coating
  • 1 cup panko breadcrumbs or crushed cornflakes For extra crunch

For the hot honey
  • 1/2 cup honey Warmed with chili flakes or hot sauce
  • 1 teaspoon chili flakes Adjust according to spice preference
  • 1 pinch salt To enhance flavor
For the slaw and toppings
  • 2 cups shredded cabbage For crunch
  • 1/4 cup chopped cilantro For freshness
  • 2 tablespoons mayonnaise or Greek yogurt Optional, for creaminess

For serving
  • 8 small tortillas Corn or flour, warm

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) if baking the shrimp.
  2. Set up a dredging station with three bowls: one with seasoned flour, one with beaten eggs, and one with panko or crushed cornflakes.
  3. Dredge each shrimp first in the flour, then in the eggs, and finally in the panko.
  4. Place breaded shrimp on a baking sheet lined with parchment paper.
Cooking
  1. Bake for 10-15 minutes or until shrimp are golden and crispy. Alternatively, fry in a pan on medium heat until golden.
  2. While shrimp cooks, combine honey, chili flakes, and salt in a small saucepan over low heat until warmed.
Assembly
  1. In each tortilla, add a layer of crunchy slaw, place the crispy shrimp on top, then drizzle with hot honey.
  2. Garnish with cilantro, a squeeze of lime, and any additional toppings you like.

Notes

For meal prep, store shrimp, tortillas, and toppings separately to avoid sogginess. Reheat the shrimp in an air fryer for best results.
