  • 4-6 ounces Salmon fillets (skin on or off)
  • 1/4 cup Hot honey Store-bought or homemade with honey and chili flakes
  • 2 tablespoons Soy sauce (or tamari)
  • 2 cloves Garlic (fresh minced) Jar garlic works in a pinch
  • 1 tablespoon Lemon juice (or lime juice)
  • 1 tablespoon Butter For richness
  • to taste Salt
  • to taste Pepper
  • to taste Smoked paprika or chili flakes (optional) For extra heat

Method
 

Preparation
  1. Heat your oven to 400 F. Line a sheet pan with foil or parchment for easy cleanup.
  2. Pat the salmon dry with paper towels. This helps it roast instead of steam. Season with salt and pepper.
  3. In a small bowl, stir together hot honey, soy sauce, minced garlic, lemon juice, and melted butter. Taste and adjust with chili flakes for more heat or lemon for more tang.
  4. Brush or spoon the glaze over the salmon, saving a little for the end.
Cooking
  1. Bake for about 10 to 14 minutes depending on thickness. When it flakes easily and looks opaque, it is done.
  2. For a stickier glaze, broil for 1 to 2 minutes at the end, watching closely.
  3. Spoon the remaining glaze over the top right before serving and add lemon wedges on the side.

Notes

Patting the salmon dry helps the glaze cling. Do not overcook; salmon continues cooking after it comes out of the oven.
