Preparation
- Heat your oven to 400 F. Line a sheet pan with foil or parchment for easy cleanup.
- Pat the salmon dry with paper towels. This helps it roast instead of steam. Season with salt and pepper.
- In a small bowl, stir together hot honey, soy sauce, minced garlic, lemon juice, and melted butter. Taste and adjust with chili flakes for more heat or lemon for more tang.
- Brush or spoon the glaze over the salmon, saving a little for the end.
Cooking
- Bake for about 10 to 14 minutes depending on thickness. When it flakes easily and looks opaque, it is done.
- For a stickier glaze, broil for 1 to 2 minutes at the end, watching closely.
- Spoon the remaining glaze over the top right before serving and add lemon wedges on the side.
Notes
Patting the salmon dry helps the glaze cling. Do not overcook; salmon continues cooking after it comes out of the oven.
