- Preheat your oven to 400°F.
- Place your skillet in the oven with a tablespoon or two of butter and let it melt.
- In a bowl, whisk together cornmeal, flour, baking powder, salt, and sugar (if using).
- Add eggs, buttermilk, and melted butter, then stir just until combined.
- Carefully remove the hot skillet from the oven, swirl the melted butter in the skillet, and pour in the batter.
- Bake for 18 to 22 minutes until golden and a toothpick inserted comes out clean.
- Cool for 5 to 10 minutes, then drizzle generously with hot honey before slicing and serving warm.
Notes
Best served warm, with leftovers storing well at room temperature for a day or in the fridge for up to 4 days. Reheat in the oven for best texture. Adjust hot honey drizzle based on heat preference.
