- Add tahini and lemon juice to your blender or food processor. Blend for about 30 seconds until creamy.
- Add garlic, salt, and olive oil, and blend again until well mixed.
- Add rinsed chickpeas and blend until thick and mashed.
- Slowly add cold water, one tablespoon at a time, blending until the hummus is fluffy and smooth. Stop to scrape down the sides as needed.
- Taste the hummus and adjust the seasoning; add more lemon juice, salt, or water as preferred.
Notes
For a super smooth texture, try peeling the chickpeas, or blend longer and ensure your water is very cold. Garlic flavor intensifies over time; consider this when serving.
