  • 3 cups Old fashioned oats For best chunky texture.
  • 1/2 cup Honey Acts as the glue for clusters.
  • 1/4 cup Oil or melted butter Neutral oil, coconut oil, or butter can be used.
  • 1/4 cup Brown sugar Optional for deeper sweetness.
  • 1 teaspoon Salt Enhances the flavor of honey.
  • 1 teaspoon Cinnamon Optional for added warmth.
  • 1 teaspoon Vanilla extract Optional for a bakery-style flavor.
  • 1 large Egg white Optional; helps form bigger clusters.
Add Ins
  • 1 cup Chopped nuts, dried fruit, chocolate chips, toasted coconut, or seeds Optional, mixed in after baking.

Method
 

Preparation
  1. Heat your oven to 325°F (about 165°C). Line a baking sheet with parchment paper.
  2. In a large bowl, stir together old fashioned oats, salt, and cinnamon if using.
  3. Warm the honey with oil (and brown sugar if using) just until it pours easily.
  4. Stir the warm honey mixture into the oats until everything is well coated.
  5. If using egg white, whisk it until foamy and stir it into the mixture.
  6. Pour the granola mixture onto the prepared baking sheet and press it into a firm, even layer.
Baking
  1. Bake for about 20 to 25 minutes until golden, checking at 18 minutes if your oven runs hot.
  2. Let it cool completely on the pan, then break it into clusters.
Storing and Serving
  1. Store granola in an airtight container for up to 10-14 days.
  2. For a crunch revival, re-bake in a preheated oven at 300°F (150°C) for 5 to 8 minutes.

Notes

For chunkier pieces, press down halfway through baking gently. This granola is great for yogurt parfaits, breakfast bowls, and as a snack by the handful.
