Preparation
- Heat your oven to 325°F (about 165°C). Line a baking sheet with parchment paper.
- In a large bowl, stir together old fashioned oats, salt, and cinnamon if using.
- Warm the honey with oil (and brown sugar if using) just until it pours easily.
- Stir the warm honey mixture into the oats until everything is well coated.
- If using egg white, whisk it until foamy and stir it into the mixture.
- Pour the granola mixture onto the prepared baking sheet and press it into a firm, even layer.
Baking
- Bake for about 20 to 25 minutes until golden, checking at 18 minutes if your oven runs hot.
- Let it cool completely on the pan, then break it into clusters.
Storing and Serving
- Store granola in an airtight container for up to 10-14 days.
- For a crunch revival, re-bake in a preheated oven at 300°F (150°C) for 5 to 8 minutes.
Notes
For chunkier pieces, press down halfway through baking gently. This granola is great for yogurt parfaits, breakfast bowls, and as a snack by the handful.
