Toppings
  • soft boiled eggs Cooked to preference.
  • green onions Chopped for garnish.
  • toasted sesame seeds For added crunch and flavor.
  • nori strips For a traditional touch.

Method

Preparation
  1. Start the broth by adding chicken broth to a pot and bringing it to a gentle simmer. Grate in garlic and ginger.
Cooking the Chicken
  1. Add the chicken to the simmering broth and let it cook gently for about 12 to 18 minutes, depending on thickness. Pull it out, shred it with two forks, and return it to the pot.
Season the Broth
  1. Add soy sauce, tasting as you go. Add black pepper, and if desired, a splash of rice vinegar for brightness or sesame oil for richness at the end.
Add Veggies
  1. Toss in mushrooms first, followed by leafy greens at the end to keep them fresh.
Cook Noodles
  1. Cook noodles in a separate pot, drain, and then add them to bowls. If making just one meal, cooking them directly in the broth is fine.
Build the Bowl
  1. Place noodles in bowls, ladle the broth and chicken over them, and finish with toppings like green onions, soft boiled eggs, sesame seeds, and chili paste to taste.

Notes

Make the broth and chicken ahead of time, cooking noodles fresh or keeping them separate to avoid sogginess. Taste before serving and adjust broth seasoning as needed.
