- Bring a pot of salted water to a boil and cook your pasta. Before draining, scoop out some pasta water and set it aside.
- In a blender or food processor, blend cottage cheese, parmesan, garlic, and a splash of pasta water until smooth. Add more water as needed to achieve a creamy sauce.
- Add the sauce back into the warm pot (heat off or on low). Toss the pasta in, allowing the heat from the noodles to warm the sauce without cooking it hard.
- Taste and adjust seasoning as necessary, adding more salt, pepper, or parmesan. If the sauce is thick, add another splash of pasta water and toss again.
Notes
If your sauce looks grainy, it likely needs more blending and a bit more warm pasta water. Leftovers can be stored in an airtight container for up to 3 days; reheat with a splash of water or milk.
