Base Ingredients
  • 1 - 1.5 cups egg whites Carton egg whites are totally fine
  • 1 cup cooked potatoes or hash browns Leftovers work great
  • 1/4 cup black beans Optional but adds extra protein and fiber
  • 1/4 cup salsa
  • 2 tbsp shredded cheese Or a spoon of cottage cheese
  • 1 handful spinach or peppers Optional
  • Salt, pepper, and a pinch of cumin or taco seasoning
Toppings
  • avocado
  • hot sauce
  • cilantro
  • Greek yogurt

Method
 

Preparation
  1. Warm up your potatoes in a skillet with a tiny bit of oil spray or a teaspoon of olive oil until they are golden.
  2. If using, toss in the peppers or spinach for a minute until softened.
  3. Pour in the egg whites, season with salt, pepper, and cumin, stirring gently until just set.
  4. Build your bowl: potatoes first, followed by egg whites, beans (if using), salsa, and cheese. Add toppings as desired and enjoy while hot.

Notes

For meal prep, store cooked ingredients separately from fresh toppings. Reheat carefully to avoid rubbery eggs, adding a splash of water if necessary.
