  • 4 cups baby arugula or spring mix You can also use chopped romaine.
  • 2 medium Honeycrisp or Pink Lady apples Slice just before serving for best results.
  • 1 cup candied pecans Store-bought saves time, or use homemade.
  • 1 cup crumbled goat cheese or feta Optionally use shaved parmesan.
  • 1/2 cup dried cranberries Optional for added sweetness.
Honey Mustard Dressing
  • 1/4 cup olive oil Base oil for dressing.
  • 2 tablespoons Dijon mustard For tanginess.
  • 2 tablespoons honey Adjust for sweetness as needed.
  • 2 tablespoons apple cider vinegar Regular white wine vinegar also works.
  • to taste salt and pepper Season to taste.

Method
 

Preparation
  1. Wash and dry the greens thoroughly to ensure the dressing adheres.
  2. Slice the apples just before serving to keep them crisp and pale.
Assembly
  1. Toss the greens with a small amount of dressing first.
  2. Layer the sliced apples, candied pecans, and cheese on top.
  3. If transporting, pack the dressing separately and toss just before serving.
Dressing Preparation
  1. Combine olive oil, Dijon mustard, honey, apple cider vinegar, salt, and pepper in a jar.
  2. Shake well until emulsified; taste and adjust sweetness or tanginess as desired.
  3. For creaminess, add Greek yogurt or mayo.
