Ingredients

Main Ingredients
  • 2 pounds Potatoes (russet, Yukon gold, red, or baby potatoes)
  • 2 tablespoons Olive oil Can substitute with other oils if preferred
  • to taste Salt Be generous; potatoes can handle a lot of salt
  • to taste Black pepper
  • 1 teaspoon Garlic powder or fresh minced garlic
  • 1 teaspoon Paprika (regular or smoked)
Optional Seasonings and Garnishes
  • to taste Onion powder Optional
  • to taste Dried herbs Optional
  • to taste Chili flakes Optional
  • to taste Fresh parsley For garnish
  • to taste Green onions For garnish
  • 1 Squeeze of lemon Optional for finishing

Method

Preparation
  1. Preheat the grill to medium heat, adjusting if necessary to avoid burning the potatoes.
  2. Cut the potatoes into rounds about half an inch thick or into bite-sized chunks for even cooking.
  3. Toss the cut potatoes with olive oil, salt, pepper, garlic powder, and paprika, ensuring they are well coated.
Grilling
  1. For the direct method, place the seasoned potatoes directly on the grill grates and close the lid.
  2. Turn the potatoes every few minutes. If they resist flipping, leave them for another minute.
  3. Check for doneness by inserting a fork which should slide in easily without resistance.
  4. For the foil packet method, toss the potatoes with seasonings, place in a double layer of foil, seal tightly, then grill, flipping occasionally.
  5. For the wedges, cut the medium potatoes accordingly, season similarly, and ensure even cooking by moving to indirect heat if they brown too quickly.
  6. For baby potatoes, parboil for 8-10 minutes, then grill until the skins blister, either after boiling or directly but at lower heat.

Notes

Feel free to mix and match seasonings to suit your taste. If making for a gathering, consider doubling the recipe, as they tend to disappear quickly.
