Salad Ingredients
  • 3 cups green cabbage, finely chopped
  • 1 large English cucumber, chopped small
  • 2 cups baby spinach or romaine, chopped
  • 3-4 green onions, sliced
  • 1 big handful fresh basil
  • 1 big handful fresh parsley
  • 1 chives or cilantro, optional
Dressing Ingredients
  • 1 clove garlic
  • 1 lemon, juice of
  • 2-3 tablespoons olive oil
  • 1/3 cup plain Greek yogurt or mayo
  • 2 tablespoons Parmesan, optional
  • Salt and pepper, to taste
  • 1 splash water, or a small piece of avocado For thinning the dressing

Method
 

Preparation
  1. Chop your greens: Start with the cabbage, cucumber, spinach or romaine, and green onions, then toss them in a big bowl.
  2. Blend the dressing: In a blender, add basil, parsley, chives or cilantro (if using), garlic, lemon juice, yogurt or mayo, olive oil, parmesan (if using), salt, pepper, and water. Blend until smooth.
  3. Taste the dressing and adjust seasoning with more lemon or salt if needed.
  4. Pour the dressing over the chopped salad and stir until everything is coated. Let it sit for 5 to 10 minutes.
Serving
  1. Serve the salad with tortilla chips for scooping, in a wrap, on toast with avocado, with eggs, or as a side with grilled dishes.

Notes

This salad holds up for about 2 days in the fridge. Adjust the recipe according to the herbs you have and personalize it with your favorite add-ins.
